Deep Fried Burrata with Broccoli, Garlic & Pesto

Part1: Fried Burrata Recipe

Ingredients

  • One Burrata (or as many as desired) 
  • Oil for frying (canola, sunflower or vegetable oil)
  • Breading Mix
    • Flour (all purpose)
    • One Egg (mixed)
    • Breadcrumbs

Instructions

  1. Prepare flour, eggs and bread crumbs in their own bowl, ready to be used to coat burrata.
  2. Carefully, place burrata in flourCoat and dust off excess flour.
  3. Dip in egg. Then, coat with breadcrumbs
  4. Place the burrata back in egg and back to breadcrumbs again for a second coating. You can use a spoon to help coat.
  5. Make sure frying oil is at 350F. Submerge coated burrata into frying oil. Take out once golden brown.
  6. Enjoy your fried burrata!

Part 2: Pesto Sauce

 

Ingredients

  • One Broccoli Garlic & Oil Lazy Pouch
  • 30 grams basil
  • 200 grams pistacchio
  • 150 grams extra virgin olive oil
  • 80 grams Parmigiano & Pecorino (40g of each)
  • 4-6 cloves garlic
  • Salt & Pepper to taste

Instructions

  1. In a blender, combine all ingredients and blend until desired thickness is achieved. Occasionally, scrape the sides of the blender with a spatula and blend again.
  2. In a large bowl, mix the pesto with a cooked and cooled Broccoli Garlic & Oil pasta until desired amount of pesto is incorporated.
